I was finding it slightly tougher to see so went online to research eye health. Are there things we can do to strengthen our eyes - just like we exercise to strengthen out muscles.

Like any muscle, strengthen it by repeated movement. It is tough to lift weights so you have to just do lots of repetitions. Look left, right, up, down, in circles and repeat it again and again.
Vitamins are good for eyes. Vitamin A particularly (Beta Carotene). In the war, soldiers who were expected to see better in the dark were given extra rations of carrots. Vitamin A is found in most orange vegetables as well as dark green ones. Broccoli is also good.
All organs of the body including the eyes benefit from a strong cardiovascular system. So aerobic exercise is the idea here. There are lots of articles you can research on what to do. Get out and move. Walking is one of the best ways to get aerobic exercise. I am sure you know of lots of other ways.
Eyes benefit from antioxidants. This would be most foods with vitamin C and E (like citrus fruit, most fruit, many vegetables). Berries are particularly high in antioxidants. They are found in tea (particularly Green Tea), broccoli, and even whole grains.
Zinc is also an element that supports healthy eyes. Zinc is found in oysters, and to a far lesser degree in most animal proteins, beans, nuts, almonds, whole grains, pumpkin seeds and sunflower seeds.
Lutien and Zeaxanthin is found in the retina. It protects it from damage. These are found in many vegetables and some fruits (like cantalope and kiwi).
The bottom line on eyes it seems is just eat well and exercise. The stuff it takes to keep you overall healthy.
